Sarah's SAVOURY Blueberry Orange Healthy Muffins

Makes 12

2 ½ cups old fashioned oats, ground
½ cup organic coconut sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
½ cup unsweetened applesauce
¼ cup organic coconut oil, melted
1 cup 0% Greek yogurt, plain
1/3 cup liquid egg whites, lightly beaten
rind of 1 organic orange (washed well)
juice of ½ organic orange
1 ½ cups organic blueberries

Preheat oven to 375 degrees.

~ mix together all of the dry ingredients in a large bowl
~ in a separate bowl, combine applesauce, coconut oil, Greek yogurt, egg whites, orange rind, and orange juice.
~ Add liquid to the dry mixture and stir until combined
~ fold in the blueberries

I use the silicone muffin liners for less mess, but if you are using a regular muffin pan, coat with coconut oil before spooning mixture into the cups.

Bake for 23-25 mins (or until toothpick inserted into centre comes out clean).
