Chocolate Hazelnut Protein Bars

Ingredients
3 Scoops (3/4 Cup) Chocolate protein powder (We love Isagenix Isapro)
½ Cup Coconut flour
½ Cup Unsweetened shredded coconut
½ Cup Puffed quinoa
3 Tbsp ground flax
1 tsp caramel extract
2 Tbsp Coconut oil (melted)
¾ Cup Unsweetened chocolate almond milk
½ Cup crushed hazelnuts
For topping
3 Tbsp natural peanut butter
3 Tbsp dark chocolate chips
1 tsp coconut oil
Directions
1. In a large bowl mix protein powder, coconut flour, coconut, flax and puffed quinoa
2. Add melted coconut oil, caramel extract and almond milk
3. Stir to combine and press into 8x8 pan
4. Sprinkle the crushed hazelnuts on top of the bar and press slightly
5. Melt the peanut butter, chocolate chips and 1 tsp coconut oil together
6. Spread on top of the bar
7. Place in fridge or freezer to set before slicing into bars
Tip: If you line your pan with parchment/waxed paper or plastic wrap before making the bars you can simply lift it out of the pan and then cut on a cutting board. This will make it slightly easier to cut evenly.
