Seedy Zuchinni Muffins

Ingredients

 

½ Cup Low Fat Greek Yogurt

1 Egg

¼ Cup Egg Whites

¼ Cup Coconut Oil, Melted

¼ Cup Organic Maple syrup

1 Cup (packed) Shredded Zucchini 

½ Cup Coconut flour

2 Tbsp Chia Seeds

2 Tbsp Hemp Seeds

2 Tbsp Pumpkin Seeds

2 Tbsp Mini Dark Chocolate chips

1 tsp Cinnamon

½ tsp Baking soda

2 tsp Baking powder

 

Directions

 

Preheat oven to 350 degrees

 

1. In a large bowl, whisk egg, egg whites, yogurt, and maple syrup.  Add melted coconut oil and whisk.

2. Stir in zucchini, chia seeds, hemp seeds, pumpkin seeds, chocolate chips, cinnamon, baking powder and baking soda.

3. Stir in coconut flour

4. Spoon into lightly greased muffin tin, or silicone muffin cups

5. Bake 25-30 min until toothpick comes out clean
