Cranberry Ginger Protein Balls

Ingredients
1 Cup Old fashioned oats
1 Cup Puffed quinoa
½ Cup Unsweetened, shredded coconut
4 Scoops (1 Cup) Vanilla protein powder
¼ Cup Coconut oil, melted
½ Cup Unsweetened almond milk
1 Tbsp Molasses
¼ Cup Dried cranberries, chopped into small pieces
2 Tbsp Crystallized ginger, chopped into small pieces
2 tsp Ground ginger
1 tsp Ground cinnamon
2 Tbsp White Chocolate chips
Directions
1. In a large bowl, mix together the oats, puffed quinoa, coconut, protein powder, ground ginger, ground cinnamon, cranberries, and crystallized ginger
2. Melt the coconut oil, and add to the dry mixture along with the molasses and almond milk
3. Form into balls and place on parchment lined baking sheet. Place in freezer for about 10 minutes to firm up.
4. Melt the white chocolate chips with ½ tsp coconut oil.
5. Dip the balls into the melted chocolate and top with a cranberry or ginger piece if desired
Store in airtight container in the fridge or freezer
