Ingredients
3 Cups Brown rice crisp cereal
4 Scoops Vanilla protein powder (We love Isagenix IsaPro)
4 Tbsp Coconut flour
3 Tbsp Unsweetened cocoa
3 Tbsp PB2
½ Cup Natural Peanut butter
¼ Cup Coconut oil
1 Square (1 oz) unsweetened baking chocolate, chopped
Directions
1. Mix all dry ingredients in a large bowl
2. Melt peanut butter and coconut oil in a small saucepan
3. Add melted peanut butter mixture to dry ingredients an mix well
4. Form into balls, place on parchment lined baking sheet, and place in the freezer to set.
Because of the texture of these balls, it is easier to form them into balls by squeezing, rather than rolling. These soften quickly, so these are best if you keep them in the freezer and take them out just a few minutes before eating them.
