Dark Chocolate Coconut Protein Bars with crushed Candy Canes
Makes 16 Bars
Ingredients:
1 cup old fashioned oat (large flake) 1 cup old fashioned oats, ground
1 cup unsweetened coconut
¼ cup organic coconut oil, melted
4 scoops undenatured vanilla protein powder (we love Isagenix Isapro)
1 1/2 tbsp unsweetened cocoa powder
½ cup unsweetened almond milk
1/3 cup good quality dark chocolate, melted
2 mini candy canes, crushed
Instructions:
Mix all ingredients together in large bowl (except dark chocolate and candy canes). Line an 8 x 8 pan with parchment paper, and drape over the side so easy to remove after.
Press mixture into pan and even out.
Place in freezer for about 20 mins. Melt chocolate over double boiler. Pour and spread dark chocolate over bar layer. Sprinkle with crushed candy cane and place in freezer for 10-15 mins to set.
