Prosciutto & Brie Egg Bites

5 Large eggs

¾ Cup egg whites

¾ Cup Cottage cheese

6 Slices prosciutto

1/3 Cup Brie

½ tsp garlic powder

Pepper to taste




Preheat oven to 300 degrees


Place 12 silicone muffin cups, or a 12 cup muffin tray in a baking dish that is at least as deep as the muffin cups.


1. Cut prosciutto slices in half and place each half in the bottom of the silicone muffin cups

2. Crumble/chop the brie and divide between muffin cups

3. Place remaining ingredients in a blender and mix well

4. Pour the egg mixture into each cup filling to just below the top

5. Fill the baking tray with hot water to about ½ inch below top of muffin cups being careful to not pour the water into the egg mixture, then cover entire dish tightly with foil

6. Place baking dish in center of oven and bake for approximately 1 hour and 15 min

7. Remove from oven & remove foil.  You can remove egg bites from muffin cups and serve immediately. Or allow to cool and transfer to air tight container and store in fridge.  These will keep several days and can be reheated in the microwave.
