Healthy Role Models Fudge
Makes 25 squares

2 cups raw walnuts
2 cups fresh Medjool dates, pitted and chopped
2 scoops vanilla or chocolate undenatured whey protein (we love Isagenix vanilla Isapro)
5 tbsps unsweetened organic cocoa powder
1 tbsp organic vanilla extract
Soak walnuts in cold water for about 4 hours
Drain, and then pulse in food processor until chopped
Add dates, and pulse until blended well with the walnuts
Add the rest of the ingredients, blending and stopping to scrape the sides of the processor ~ mixture will form a ball
Press into a square pan (I used a spatula to smooth it nice and flat). Put in freezer for at least 30 mins to set. Cut into 25 squares and store in freezer until ready to serve.
