Mushroom and Leek Chicken

Honey Lime Chicken Skewers

Servings: 12

2 Pounds Boneless, skinless chicken breast or 2 pounds chicken breast fillets

¼ Cup extra virgin olive oil

3 Tbsp honey

3 Tbsp low sodium soy sauce

1 Tbsp fresh lime juice

2 tsp Sriracha sauce (or to desired spice level)

3 Cloves garlic

1 inch piece of ginger




1. Cut Chicken breast into thin strips

2. Place remaining ingredients in blender and blend until smooth

3. Thread chicken onto skewers

4. Place in shallow pan and pour 2/3 of the sauce over the chicken, reserve remainder for grilling process

5. Place chicken in the fridge and allow to marinade at least 2 hours

6. Fire up the grill to a med-high heat

7. Place skewers on grill and grill for about 8 min before turning

8. Turn skewers, brush with some of the reserved marinade and grill about another 8 minutes.  Grill time will depend on heat of your grill and thickness of your chicken.

9.  When chicken is no longer pink, remove from grill and serve.
