Maple Bacon Breakfast Protein Balls

Nutrition per Serving: 107 Calories, 8g Carbohydrates, 6g Fat, 5g Protein, 2g Sugar

Ingredients

 

1 Cup Large flake oats

1 Cup Puffed quinoa

1 Cup Shredded, Unsweetened coconut

4 Scoops (1 Cup) Vanilla protein powder (We love Isagenix IsaPro)

¼ Cup Coconut oil, melted

½ Cup Unsweetened almond milk

3 Tbsp Peanut butter

2 Tbsp Maple Syrup

1 tsp Maple extract

1 Slice of bacon, cooked and cut into 22 tiny strips

 

Directions

 

1. In a large bowl, mix all dry ingredients except for bacon

2. In a small saucepan heat coconut oil, peanut butter, almond milk, maple syrup and maple extract just until coconut oil and peanut butter are melted.

3. Add liquid mixture to dry ingredients and stir to combine

4. Form into balls and place on parchment lined cookie sheet adding 1 piece of bacon to each ball as you form them (this helps them stick better)

5. Place balls in freezer to firm up and then transfer to an airtight container.  Store in fridge or freezer.
