Matcha Protein Balls

Ingredients

 

1 Cup large flake oats

1 Cup puffed quinoa

¾ cup unsweetened coconut

4 scoop vanilla protein

2 Tbsp ground flax

2 Tbsp Pumpkin seeds

2 Tbsp Mini chocolate chips

2 tsp Matcha powder

2 Medjool dates, pitted

½ Cup unsweetened vanilla almond milk

¼ cup coconut oil, melted

 

 

Directions

 

1. Place dates and almond milk in a blender and blend on high until dates are well chopped

2. In a large bowl, mix all dry ingredients

3. Stir in almond milk/date mixture and melted coconut oil

4. Form into balls and place on parchment lined baking sheet

5. Place in freezer to firm up

 

Store in airtight container in fridge or freezer.
