Protein Nanaimo Bars

Pretty close to the original Nanaimo bar without all the sugar! Best to keep in the freezer or fridge so they don’t soften too much. From the freezer they only take about 10 min to thaw enough to eat.
Ingredients:
Base
1 Cup Oats
1 Cup Ground Oats
1 Cup Shredded Coconut
1/4 Cup unsweetened Cocoa
2 scoops vanilla Isapro protein powder
1/3 cup melted coconut oil
1/2 Cup vanilla almond milk (unsweetened)
Middle Layer
1 Egg
1 Egg yolk
2 tsp vanilla
3/4 cup unsweetened vanilla almond milk
3 packets stevia
2 tsp corn starch
Chocolate Layer
1/3 cup melted coconut oil
3 packets stevia
1/2 scoop vanilla Isapro protein powder
2 tbsp almond milk (I just used the vanilla again)
2 tbsp unsweetened cocoa powder
Instructions:
Start by making the base. Mix all ingredients and press into a 9 x 9 pan. Stick in the freezer to set while making the middle layer.
For the middle layer, pour almond milk and vanilla into saucepan and heat over medium heat and heat until just warm.
Combine egg, egg yolk, corn starch and stevia in a medium bowl. Slowly pour the heated almond milk into the bowl while whisking to temper the egg. Then return the entire mixture to the sauce pan.
Continue to heat, while whisking, until mixture becomes thick. Then pour onto the base layer and smooth out with a rubber spatula.
Return to freezer for approx 30 min to firm up! Then begin prepping the chocolate layer. Melt the coconut oil, then add the rest of the ingredients and whisk until smooth.
Immediately pour over the bars and tilt pan to evenly coat the bar with the chocolate.
Return to freezer for approx 30 min. Then cut into bars.
Store in air tight container in freezer or fridge.
