Pumpkin Pie Protein Balls
Makes 20 Balls
1 cup Old fashioned large flake oats
1 cup ground oats
1 cup unsweetened shredded coconut
½ cup pure pumpkin puree (not pumpkin pie filling)
¼ cup Coconut oil, melted
4 scoops Undenatured vanilla protein powder (we love Isagenix IsaPro)
1 tbsp. Pumpkin pie spice
1/2 cup Pumpkin seeds, raw
*optional dark chocolate (enough to dip tops of balls in)
Combine and store in airtight container.
Mix all ingredients together in large bowl. Roll into balls, and placed on parchment lined cookie sheet. Let set in freezer for 20 mins and then dip in melted chocolate or just store in airtight container.
