Raspberry Truffles

Ingredients

 

1.5 Cups Large flake oats

½ Cup Shredded, unsweetened coconut

4 Scoops (1 Cup) Vanilla protein powder (We love Isagenix Isapro)

1 cup fresh or thawed frozen raspberries

3 Tbsp Unsweetend cocoa powder

¼ Cup Coconut oil, melted

2 Tbsp Dark chocolate chips

¼ tsp Chia seeds

 

Directions

 

1. In a large bowl, mix oats, protein powder, cocoa, and coconut

2. Blend raspberries in a blender and reserve 2 tbsp in a bowl.

3. Mix remaining blended raspberries and coconut oil into the dry mixture

4. Mix well and form into balls, place on parchment lined cookie sheet

5. Place balls in the freezer to firm up

6. Mix the 2 Tbsp raspberries with the chia seeds and set aside

7. Melt the chocolate chips, then dip each ball in the chocolate mixture

8. Top each ball with a dab of the raspberries

 

Store in an airtight container in fridge or freezer
