Salty Fig Balls

½ Cup Dried Figs

½ Cup Boiling water

¼ Cup Natural peanut butter

½ Cup sliced almonds

4 Scoops (1 Cup) Vanilla Protein powder (We Love Isagenix Isapro)

1 tsp pink sea salt

2 Cups Puffed quinoa

 

Directions

 

1. Place figs in small bowl and cover with ½ cup boiling water.  Let soak about 30 min

2. Place figs & water, peanut butter, almonds, salt and protein powder into a food processer and pulse until smooth

3. Scrape mixture into a large bowl and stir in 2 cups of puffed quinoa

4. Form into balls and place on parchment lined baking sheet

5. Place in freezer to firm up, then transfer to an airtight container and store in fridge or freezer
