Slow Cooker Chicken Soup

A hearty chicken soup that is super easy to prepare and just as easy to customize with any vegetables your family enjoys.
Ingredients
1 pound boneless, skinless chicken breasts, thinly sliced
2 cups lean ham, diced
2 cups onion, diced
2 cups carrots, peeled and diced
1 cup green pepper, diced
1 cup frozen corn
3 cloves garlic, crushed
3 tsp dried oregano
1 tsp dried thyme
1 cup dried lentils
7 cups low-sodium chicken broth
2 Tbsp lemon juice
6 Tbsp grated parmesan cheese
salt/pepper to taste
Directions
Place all ingredients except parmesan cheese in a slow cooker and stir to mix. Cook on low for 8-10 hours.
Serve topped with 1 tbsp of parmesan cheese.
This recipe can easily be prepared ahead of time making it super quick to stick in the slow cooker in the morning before you head out the door. Simply prepare all the ingredients except the cheese, lentils, lemon juice and chicken broth and place in a large ziplock bag. You can store this in the freezer until you are ready to use. Place in the fridge the night before you want to use it, then dump the contents into the slow cooker in the morning, add the lentils, lemon juice and chicken broth and you are ready to go. If it is still slightly frozen that’s ok. Just add approximately an hour of cook time.
