Mushroom and Leek Chicken

Sriracha Glazed Turkey Meatballs

Ingredients

 

For Meat Balls

 

1 Pound Extra lean ground turkey

1 Large egg

¼ Cup Quinoa flakes

1/3 Cup Green onion, chopped

1/3 Cup Cilantro, chopped

2 Cloves garlic, crushed

1 Inch piece of ginger, grated

 

For Glaze

 

1/3 Cup Water

2 Tbsp Rice vinegar (unseasoned)

1 Tbsp Light soy sauce

1 Tbsp Sriracha sauce

2 Tbsp Honey

1 Tbsp Cornstarch, mixed with 2 Tbsp cold water

 

Directions

 

Pre-heat oven to 375 degrees

 

1. In a large bowl, mix all ingredients for the turkey meatballs

2. Form into balls and place on a parchment lined baking sheet

3. Bake for 30 min

4. While meat balls are baking, mix water, rice vinegar, soy sauce, sriracha and honey.  Heat in a small sauce pan over medium heat.

5. Stir in the 1 tbsp of cornstarch mixed with 2 tbsp water.  Whisk well to avoid lumps.

6. Turn up heat to med-high and cook until thickened

7. Remove meat balls from oven and add to the sauce pan of glaze.  Stir gently to coat the meat balls in the glaze.

8. Move to a plate and serve
